Time for our annual Super Bowl retro appetizer! This year it’s a cheesy dip for whatever crackers you happen to have on hand — with a special pink addition…
1 cup small curd cottage cheese
1 tablespoon crumbled Blue cheese
1/2 cup shredded beets
1 tablespoon lemon juice
1/2 teaspoon saltIn a mixer or blender beat cottage cheese and Blue cheese until smooth. Add remaining ingredients and mix well. Chill.
That’s right, beets and cottage cheese and blue cheese.
It looks like a classic case of, “I like this ingredients separately.”
“Let’s throw them all into the food processor and see what happens.”
It turns very, very pink, that’s what happens!
This was pretty good, at least initially. The sweet beets were nicely balanced by a tang from the Blue cheese. After a few bites, unfortunately, the blue cheese started becoming overwhelming. This seems like one of those appetizers that would sit on the buffet table at your party and everybody would try it…. but nobody would take seconds.

Oh, too bad this wasn’t a winner – just adding extra veggies to a junk food day item sounded like it would have been great. I can see where adding creamy cheese seemed a good idea, but beets are kind of … spineless, when it comes to flavor; the mild sweetness wouldn’t ever work with a blue. Maybe a chevré with green onions would have worked better.
